Peach Crisp (Gluten/Dairy Free)


Due to health issues, I decided to try eating gluten and dairy free. I was hesitant because I thought that I would basically starve-everything has gluten or dairy...everything that I love at least. Right?

This got me thinking about desserts. I needed something that I could look forward too. Well, when I got a free box of peaches, I decided to try something new.

I found this recipe that looked easy enough to try, and it was a hit! Below is her recipe with my variations to make it gluten AND dairy free. :)

Ingredients:

  • Several large peaches - peeled, pitted and thinly sliced (enough to cover the bottom of the dish)

  • 1 cup gluten-free flour (I use Namaste's Gluten-Free flour blend)

  • 1 cup granulated sugar

  • 1/2 tsp. cinnamon

  • 1/4 tsp. salt

  • 1/2 cup cold butter (I used coconut oil)

  • (It pairs well with So Delicious' vanilla bean coconut ice cream).

Directions:

  • Pre-heat oven to 375* F and grease glass pie dish (Crisco, olive oil, or coconut oil works great).

  • Place peaches in bottom of baking dish.

  • Combine flour, sugar, cinnamon and salt in separate bowl.

  • Add cold butter to the flour mixture and mix with a pastry blender or fork until mixture resembles crumbs.

  • Pour crumb mixture over peaches.

  • Bake for 45 minutes until top is bubbly and crisp!

The crisp won't turn a dark brown color, but it is definitely delcious! I want to try making it with Stevia instead of sugar, so if you do, please let me know how it turns out! Thanks. :D
