Peach Crisp (Gluten/Dairy Free)
Due to health issues, I decided to try eating gluten and dairy free. I was hesitant because I thought that I would basically starve-everything has gluten or dairy...everything that I love at least. Right?
This got me thinking about desserts. I needed something that I could look forward too. Well, when I got a free box of peaches, I decided to try something new.
I found this recipe that looked easy enough to try, and it was a hit! Below is her recipe with my variations to make it gluten AND dairy free. :)
Ingredients:
Several large peaches - peeled, pitted and thinly sliced (enough to cover the bottom of the dish)
1 cup gluten-free flour (I use Namaste's Gluten-Free flour blend)
1 cup granulated sugar
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 cup cold butter (I used coconut oil)
(It pairs well with So Delicious' vanilla bean coconut ice cream).
Directions:
Pre-heat oven to 375* F and grease glass pie dish (Crisco, olive oil, or coconut oil works great).
Place peaches in bottom of baking dish.
Combine flour, sugar, cinnamon and salt in separate bowl.
Add cold butter to the flour mixture and mix with a pastry blender or fork until mixture resembles crumbs.
Pour crumb mixture over peaches.
Bake for 45 minutes until top is bubbly and crisp!
The crisp won't turn a dark brown color, but it is definitely delcious! I want to try making it with Stevia instead of sugar, so if you do, please let me know how it turns out! Thanks. :D
