Veggie Batter (Gluten/Dairy Free)
I don't know about you, but fried up onions, zucchini, and squash are one of my favorite treats! With it being harvest time, I thought it'd be appropriate to post one of my favorite recipes. What's more, it is gluten and dairy free! I hope you enjoy it as much as I have this season. :)
Ingredients:
3/4 C Argo cornstarch
1/4 C Flour (I used Namaste's Gluten Free Organic flour blend)
1 tsp Baking powder
1/2 tsp Salt
1/4 tsp Pepper
1/2 C water
1 egg, slightly beaten (If you prefer not to use egg, just add more water)
Directions:
Mix ingredients in a bowl.
Dip and fry your veggie (or meat!) of choice.
Place on a plate or tray with paper towels or napkins (to absorb any extra oil).
**I fried mine in coconut oil, but you can use any oil
Variations:
Herb batter: Add 1 tsp Basil and 1 minced clove of Garlic.
Beer batter: Substitute 1/3 C beer for water.
